Visiting US on ESTA with Pending K1 - Is 2 Months Too Long?

I have a specific question regarding visiting the US while my K1 fiancé visa petition is pending. I am currently in the UK and planning to visit my fiancé in the States.

Here is my situation:
I want to stay for about 1.5 to 2 months. I recently got my ESTA renewed, and I have a clean travel history (never overstayed). However, I currently do not have a job in the UK. My only major “tie” right now is a necessary doctor’s appointment booked in London for right around the time I intend to return.

Given the pending K1 and my lack of employment, is a 1.5 to 2-month stay safe? Or will CBP view this duration as too risky?
